Description

A warming Apple and Carrot Ginger Soup that combines sweet apples, fresh carrots, and spicy ginger for a flavorful and nutritious dish.


Ingredients

Scale
  • 2 large apples, peeled and chopped
  • 3 medium carrots, peeled and chopped
  • 1 tbsp fresh ginger, grated
  • 1 small onion, diced
  • 2 cups vegetable broth
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion and sauté until soft.
  3. Stir in apples, carrots, and ginger. Cook for 5 minutes.
  4. Pour in vegetable broth and bring to a boil.
  5. Reduce heat, cover, and simmer for 20 minutes.
  6. Blend until smooth. Season with salt and pepper.
  7. Serve warm.
