- ½ cup heavy cream (optional)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until soft.
- Add celery root and apples; cook for 5 minutes.
- Pour in vegetable broth, salt, pepper, and thyme.
- Bring to a boil, then reduce heat and simmer for 25 minutes until vegetables are tender.
- Blend soup until smooth using an immersion blender.
- Stir in heavy cream if using.
- Serve warm.
