- 1/2 cup granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1 cup apple cider
- 1/3 cup vegetable oil
- 1 large egg
- 1 tsp vanilla extract
Instructions
- Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
- In a large bowl, whisk flour, sugar, baking powder, salt, cinnamon, and nutmeg.
- In another bowl, mix apple cider, oil, egg, and vanilla.
- Pour wet ingredients into dry ingredients. Stir until just combined.
- Divide batter evenly among muffin cups.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Cool for 5 minutes before serving.
Notes
- Use fresh apple cider for best results.
- Do not overmix the batter to keep muffins tender.
- Store in an airtight container for up to 3 days.
