Description

Delicious and moist apple cider muffins with a hint of cinnamon. Perfect for breakfast or a snack.


Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 cup apple cider
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. In a large bowl, whisk flour, sugar, baking powder, salt, cinnamon, and nutmeg.
  3. In another bowl, mix apple cider, oil, egg, and vanilla.
  4. Pour wet ingredients into dry ingredients. Stir until just combined.
  5. Divide batter evenly among muffin cups.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Cool for 5 minutes before serving.

Notes

  • Use fresh apple cider for best results.
  • Do not overmix the batter to keep muffins tender.
  • Store in an airtight container for up to 3 days.
