Description

Delicious apple cupcakes topped with cinnamon frosting, perfect for fall or any occasion.


Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 1 cup grated apple (about 1 medium apple)

Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a bowl, whisk flour, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, cream butter and sugar until fluffy. Add eggs one at a time, then vanilla.
  4. Alternate adding flour mixture and milk to the butter mixture, mixing until just combined.
  5. Fold in grated apple.
  6. Divide batter among cupcake liners, filling each 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick comes out clean. Cool completely before frosting.
