Description

A creamy and comforting soup made with apples and parsnips, perfect for a cozy meal.


Ingredients

Scale
  • 2 large apples, peeled and chopped
  • 3 medium parsnips, peeled and chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tbsp butter
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp ground nutmeg

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add onion and garlic, sauté until softened.
  3. Add apples and parsnips, cook for 5 minutes.
  4. Pour in vegetable broth and bring to a boil.
  5. Reduce heat, cover, and simmer for 20 minutes or until vegetables are tender.
  6. Blend the soup until smooth using an immersion blender.
  7. Stir in heavy cream, salt, pepper, and nutmeg.
  8. Simmer for an additional 5 minutes, then serve warm.
