- 2 cups rolled oats
- 1 cup whole wheat flour
- 1/2 cup brown sugar
- 1 tsp cinnamon
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsweetened applesauce
- 1/4 cup honey
- 1/4 cup melted coconut oil
- 1 tsp vanilla extract
- 1 cup diced apples
- 1/2 cup chopped pecans
Instructions
- Preheat oven to 350°F (175°C). Grease an 8×8 inch baking pan.
- In a large bowl, mix oats, flour, brown sugar, cinnamon, baking powder, and salt.
- In another bowl, whisk applesauce, honey, coconut oil, and vanilla.
- Combine wet and dry ingredients. Fold in apples and pecans.
- Press mixture evenly into prepared pan.
- Bake for 25-30 minutes until golden brown.
- Cool completely before cutting into bars.
Notes
- Store in airtight container for up to 5 days.
- Substitute walnuts for pecans if preferred.
- Use maple syrup instead of honey for vegan version.
