- 2 apples, peeled, cored, and chopped

- 4 cups vegetable broth
- 1 tbsp olive oil
- 1 tsp ground cinnamon

- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until softened.
- Add sweet potatoes and apples, stir to combine.
- Pour in vegetable broth and bring to a boil.
- Reduce heat, simmer until sweet potatoes are tender (about 20 minutes).
- Stir in cinnamon, ginger, salt, and pepper.
- Blend soup until smooth using an immersion blender or transfer to a blender in batches.
- Serve warm.

- For a creamier texture, add 1/2 cup coconut milk before blending.
