Ingredients

- 2 cups grated zucchini
- 1 cup grated apple
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 cup vegetable oil
- 3/4 cup sugar
- 2 eggs
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan.
- Mix flour, baking soda, baking powder, salt, and cinnamon in a bowl.
- In another bowl, whisk oil, sugar, eggs, and vanilla.
- Fold in grated zucchini and apple.
- Combine wet and dry ingredients. Stir until just mixed.
- Pour batter into loaf pan.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Cool before slicing.

- Store in an airtight container for up to 3 days.
