A refreshing Asian-inspired chicken salad with cranberries, combining savory and sweet flavors for a quick and nutritious meal.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1/2 cup dried cranberries
  • 1/4 cup sliced almonds
  • 2 green onions, thinly sliced
  • 1/4 cup cilantro, chopped
  • 2 cups mixed greens
  • 1 tbsp sesame oil
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 1 tsp rice vinegar
  • 1/2 tsp ginger, grated
  • 1/4 tsp red pepper flakes (optional)

Instructions

  1. In a large bowl, combine shredded chicken, cranberries, almonds, green onions, and cilantro.
  2. In a small bowl, whisk together sesame oil, soy sauce, honey, rice vinegar, ginger, and red pepper flakes.
  3. Pour the dressing over the salad and toss to coat evenly.
  4. Serve over mixed greens.
