Description

A refreshing and healthy avocado chicken salad with a tangy lemon vinaigrette dressing.


Ingredients

Scale
  • 2 cups cooked chicken, shredded
  • 1 ripe avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 2 cups mixed greens
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp honey
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine shredded chicken, diced avocado, cherry tomatoes, and red onion.
  2. In a small bowl, whisk together olive oil, lemon juice, honey, salt, and pepper.
  3. Pour the dressing over the salad and toss gently.
  4. Serve over mixed greens.
