Quick Avocado, Mozzarella, and Tomato Grilled Cheese

Description

This avocado, mozzarella, and tomato grilled cheese is a quick, creamy, and delicious twist on the classic sandwich. It features buttery bread, melty cheese, and fresh avocado for the perfect bite. Ideal for a quick lunch or light dinner, it’s easy to make and full of fresh flavors.


Ingredients

Scale
4 slices of your favorite bread (sourdough, whole wheat, or white work well)
1 ripe avocado, sliced
4 slices of fresh mozzarella cheese
1 large tomato, sliced
2 tablespoons fresh basil leaves, chopped (optional)
2 tablespoons butter, softened
Salt and black pepper, to taste
Balsamic glaze (optional, for drizzling)

Instructions

Assemble the sandwich:
  • Spread butter on one side of each slice of bread.
  • On the unbuttered side of two slices of bread, layer the avocado slices, mozzarella cheese, and tomato slices.
  • Sprinkle the chopped fresh basil over the tomatoes if using.
  • Season with a pinch of salt and black pepper.
  • Top each sandwich with the remaining slices of bread, buttered side out.
Grill the sandwich:
  • Heat a skillet or griddle over medium heat.
  • Place the sandwiches in the skillet and cook for 3-4 minutes on each side, or until the bread is golden brown and crispy and the cheese is melted.
  • Press down gently with a spatula while cooking to help the sandwich hold together and the cheese to melt evenly.
Serve:
  • Remove the sandwiches from the skillet and let them cool slightly.
  • For an extra touch of flavor, drizzle balsamic glaze over the sandwiches before serving.
