4 slices of your favorite bread (sourdough, whole wheat, or white work well)
1 ripe avocado, sliced
4 slices of fresh mozzarella cheese
1 large tomato, sliced
2 tablespoons fresh basil leaves, chopped (optional)
2 tablespoons butter, softened
Salt and black pepper, to taste
Balsamic glaze (optional, for drizzling)

Instructions
Assemble the sandwich:
- Spread butter on one side of each slice of bread.
- On the unbuttered side of two slices of bread, layer the avocado slices, mozzarella cheese, and tomato slices.
- Sprinkle the chopped fresh basil over the tomatoes if using.
- Season with a pinch of salt and black pepper.
- Top each sandwich with the remaining slices of bread, buttered side out.
Grill the sandwich:
- Heat a skillet or griddle over medium heat.
- Place the sandwiches in the skillet and cook for 3-4 minutes on each side, or until the bread is golden brown and crispy and the cheese is melted.
- Press down gently with a spatula while cooking to help the sandwich hold together and the cheese to melt evenly.
Serve:
- Remove the sandwiches from the skillet and let them cool slightly.
- For an extra touch of flavor, drizzle balsamic glaze over the sandwiches before serving.
