- 2 boneless, skinless chicken breasts
- 1/2 cup BBQ sauce
- 4 large flour tortillas
- 1 1/2 cups shredded cheddar cheese
- 1/4 cup diced red onion
- 2 tbsp chopped cilantro
- 1 tbsp olive oil
Instructions
- Cook chicken breasts until done, then shred.
- Toss shredded chicken with BBQ sauce.
- Place tortilla on a skillet over medium heat.
- Sprinkle cheese on half the tortilla.
- Add BBQ chicken, red onion, and cilantro.
- Fold tortilla over and cook until golden brown on both sides.
- Cut into wedges and serve hot.

- Use leftover rotisserie chicken for faster prep.
