- 2 boneless, skinless chicken breasts
- 1/4 cup BBQ sauce
- 2 tbsp ranch dressing
- 4 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, sliced
- 1/4 red onion, thinly sliced
- 1 avocado, sliced
- 1/4 cup shredded cheddar cheese
- 1/4 cup croutons
- Salt and pepper to taste
Instructions
- Preheat grill to medium-high heat.
- Mix BBQ sauce and ranch dressing in a bowl. Coat chicken breasts with half the mixture.
- Grill chicken for 6-7 minutes per side until fully cooked. Let rest for 5 minutes, then slice.
- Arrange mixed greens, tomatoes, cucumber, red onion, avocado, and cheese in a bowl.
- Top with sliced chicken and croutons. Drizzle remaining BBQ ranch dressing.
- Season with salt and pepper.
Notes
- For extra flavor, marinate chicken for 30 minutes before grilling.
- Substitute grilled shrimp for chicken if preferred.
- Add corn or black beans for more texture.
