Ingredients

- 3 medium beets, cooked and diced
- 1 cucumber, sliced
- 100g feta cheese, crumbled
- 2 tbsp fresh dill, chopped
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine diced beets, sliced cucumber, and crumbled feta.
- Add chopped dill, olive oil, and lemon juice.
- Toss gently to mix all ingredients.
- Season with salt and pepper to taste.
- Serve chilled.
Notes
- You can roast or boil the beets before dicing.
- For extra flavor, add a pinch of garlic powder.
- Store leftovers in an airtight container in the fridge for up to 2 days.
