- 1 can (15 oz) black-eyed peas, drained and rinsed
- 1 cup corn (fresh, frozen, or canned)
- 1 bell pepper (any color), diced
- 1 small red onion, finely chopped
- 2 Roma tomatoes, diced
- 1 avocado, diced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup olive oil
- 2 tablespoons lime juice
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a large bowl, combine black beans, black-eyed peas, corn, bell pepper, red onion, tomatoes, avocado, and cilantro.
- In a small bowl, whisk together olive oil, lime juice, cumin, chili powder, salt, and pepper.
- Pour dressing over the bean mixture and gently toss to coat.
- Refrigerate for at least 30 minutes before serving to let flavors blend.
- Serve with tortilla chips or as a topping for tacos, salads, or grilled meats.
Notes
- For extra spice, add diced jalapeños or a pinch of cayenne pepper.
- Drain and rinse canned beans well to remove excess sodium.
