Ingredients

- 1 can black beans (15 oz), drained and rinsed
- 1 cup corn kernels (fresh or frozen)
- 1 medium tomato, diced
- 1/2 red onion, finely chopped
- 1 jalapeño, seeded and minced
- 1/4 cup fresh cilantro, chopped
- 2 tbsp lime juice
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- In a large bowl, combine black beans, corn, tomato, red onion, and jalapeño.
- Add cilantro, lime juice, olive oil, salt, and pepper.
- Mix well until all ingredients are evenly coated.
- Cover and refrigerate for at least 30 minutes before serving.
Notes
- For best flavor, let the salsa chill for at least 1 hour.
- Adjust jalapeño amount based on your preferred spice level.
- Serve with tortilla chips or as a topping for tacos.
