Description

A fresh and flavorful salsa combining black beans, corn, and vegetables.


Ingredients

Scale
  • 1 can black beans (15 oz), drained and rinsed
  • 1 cup corn kernels (fresh or frozen)
  • 1 medium tomato, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp lime juice
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. In a large bowl, combine black beans, corn, tomato, red onion, and jalapeño.
  2. Add cilantro, lime juice, olive oil, salt, and pepper.
  3. Mix well until all ingredients are evenly coated.
  4. Cover and refrigerate for at least 30 minutes before serving.

Notes

  • For best flavor, let the salsa chill for at least 1 hour.
  • Adjust jalapeño amount based on your preferred spice level.
  • Serve with tortilla chips or as a topping for tacos.
