Description

Spicy jalapeños stuffed with a flavorful mix of black beans, rice, and seasonings, then baked to perfection.


Ingredients

Scale
  • 12 large jalapeños
  • 1 cup cooked rice
  • 1 cup black beans, drained and rinsed
  • 1/2 cup shredded cheese
  • 1/4 cup diced onion
  • 1 clove garlic, minced
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut jalapeños in half lengthwise and remove seeds and membranes.
  3. Heat olive oil in a pan and sauté onion and garlic until soft.
  4. Add black beans, rice, cumin, chili powder, salt, and pepper. Stir well.
  5. Fill each jalapeño half with the black bean and rice mixture.
  6. Sprinkle shredded cheese on top.
  7. Bake for 15-20 minutes until cheese is melted and jalapeños are tender.

Notes

  • Wear gloves when handling jalapeños to avoid skin irritation.
  • Adjust spice level by leaving more or fewer seeds in the jalapeños.
  • For extra flavor, top with chopped cilantro or a dollop of sour cream.
