- 1 cup rolled oats
- 1/2 cup almond flour
- 1/4 cup honey or maple syrup
- 1 ripe banana, mashed
- 1/2 cup fresh or frozen blueberries
- 1 tbsp chia seeds
- 1 tsp vanilla extract
- 1/4 tsp cinnamon
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, mix oats, almond flour, chia seeds, cinnamon, and salt.
- In another bowl, mash the banana and mix with honey and vanilla extract.
- Combine wet and dry ingredients. Fold in blueberries gently.
- Drop spoonfuls of dough onto the baking sheet. Flatten slightly.
- Bake for 12-15 minutes until edges turn golden.
- Let cool on the baking sheet for 5 minutes before transferring.
Notes
- Store in an airtight container for up to 5 days.
- Freeze for longer storage up to 3 months.
- Swap blueberries for other berries if preferred.
