Ingredients

Scale
  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 1/4 cup honey or maple syrup
  • 1 ripe banana, mashed
  • 1/2 cup fresh or frozen blueberries
  • 1 tbsp chia seeds
  • 1 tsp vanilla extract
  • 1/4 tsp cinnamon
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix oats, almond flour, chia seeds, cinnamon, and salt.
  3. In another bowl, mash the banana and mix with honey and vanilla extract.
  4. Combine wet and dry ingredients. Fold in blueberries gently.
  5. Drop spoonfuls of dough onto the baking sheet. Flatten slightly.
  6. Bake for 12-15 minutes until edges turn golden.
  7. Let cool on the baking sheet for 5 minutes before transferring.

  • Store in an airtight container for up to 5 days.
  • Freeze for longer storage up to 3 months.
