Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Whisk flour, sugar, baking powder, and salt in a large bowl.
- Cut in cold butter until mixture resembles coarse crumbs.
- Gently fold in blueberries and lemon zest.
- Mix cream, egg, and vanilla in a small bowl, then stir into dry ingredients until just combined.
- Shape dough into a circle on the baking sheet, cut into 8 wedges.
- Bake for 18-20 minutes until golden brown.
- Cool slightly before serving.
