- 1 whole rabbit, cut into pieces
- 2 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup chicken stock
- 1/2 cup Dijon mustard
- 1/2 cup heavy cream
- 1 tsp thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Brown rabbit pieces on all sides, then remove and set aside.
- In the same pot, sauté onion and garlic until soft.
- Return rabbit to the pot, add chicken stock, and bring to a simmer.
- Cover and cook on low heat for 45 minutes until rabbit is tender.
- Stir in mustard, cream, and thyme. Simmer for another 10 minutes.
- Season with salt and pepper before serving.
Notes
- For a thicker sauce, simmer uncovered for longer.
- Serve with mashed potatoes or crusty bread.
