Instructions
- Heat olive oil in a skillet over medium heat.
- Add chorizo and cook until browned, breaking it into small pieces.
- Add diced onion and bell pepper, sauté until softened.
- In a bowl, whisk eggs with salt and pepper.
- Pour eggs into the skillet with chorizo and vegetables.
- Scramble until eggs are fully cooked.
- Warm tortillas in a dry skillet or microwave.
- Divide the egg and chorizo mixture among tortillas.
- Sprinkle shredded cheese on top.
- Add optional toppings if desired.
- Fold the sides of the tortilla inward and roll tightly.
- Serve immediately.
