Description

Soft and chewy cookies with a sweet-tart flavor from brown sugar and rhubarb.


Ingredients

Scale
  • 1 cup brown sugar
  • 1/2 cup butter, softened
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup diced rhubarb

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cream brown sugar and butter until smooth.
  3. Beat in egg and vanilla.
  4. Mix flour, baking soda, and salt in a separate bowl.
  5. Combine wet and dry ingredients.
  6. Fold in diced rhubarb.
  7. Drop spoonfuls of dough onto a baking sheet.
  8. Bake for 10-12 minutes.
  9. Cool on a wire rack.
