Description
A classic butterscotch pie with a rich, creamy filling and flaky crust.

- 1 9-inch pie crust, baked
- 1 cup brown sugar
- 1/4 cup cornstarch
- 1/2 tsp salt
- 2 cups whole milk
- 3 large egg yolks
- 2 tbsp unsalted butter
- 1 tsp vanilla extract
- Whipped cream for topping
Instructions
- In a saucepan, mix brown sugar, cornstarch, and salt.
- Gradually whisk in milk until smooth.
- Cook over medium heat, stirring constantly until thickened.
- Beat egg yolks, then slowly whisk in 1/2 cup of the hot mixture.
- Return egg mixture to saucepan and cook for 2 more minutes.
- Remove from heat and stir in butter and vanilla.
- Pour filling into baked pie crust and chill for at least 4 hours.
- Top with whipped cream before serving.
Notes
- Use dark brown sugar for deeper flavor.
- Chill pie thoroughly before slicing.
- Store leftovers in the refrigerator.
