Description

A classic butterscotch pie with a rich, creamy filling and flaky crust.


Ingredients

Scale
  • 1 9-inch pie crust, baked
  • 1 cup brown sugar
  • 1/4 cup cornstarch
  • 1/2 tsp salt
  • 2 cups whole milk
  • 3 large egg yolks
  • 2 tbsp unsalted butter
  • 1 tsp vanilla extract
  • Whipped cream for topping

Instructions

  1. In a saucepan, mix brown sugar, cornstarch, and salt.
  2. Gradually whisk in milk until smooth.
  3. Cook over medium heat, stirring constantly until thickened.
  4. Beat egg yolks, then slowly whisk in 1/2 cup of the hot mixture.
  5. Return egg mixture to saucepan and cook for 2 more minutes.
  6. Remove from heat and stir in butter and vanilla.
  7. Pour filling into baked pie crust and chill for at least 4 hours.
  8. Top with whipped cream before serving.

Notes

  • Use dark brown sugar for deeper flavor.
  • Chill pie thoroughly before slicing.
  • Store leftovers in the refrigerator.
