A fresh and tangy peach salsa perfect for canning. It combines sweet peaches with spicy peppers for a balanced flavor.

- 4 cups peeled and diced peaches
- 1 cup diced red bell pepper
- 1/2 cup diced onion
- 1 jalapeño pepper, finely chopped
- 1/4 cup chopped fresh cilantro
- 2 tbsp lime juice
- 1 tsp salt
- 1/2 tsp ground cumin
Instructions
- Sterilize canning jars and lids.
- Combine all ingredients in a large pot.
- Bring to a boil, then reduce heat and simmer for 10 minutes.
- Fill jars with the hot salsa, leaving 1/2 inch headspace.
- Remove air bubbles and wipe jar rims.
- Seal jars and process in a boiling water bath for 15 minutes.
- Let jars cool and check seals before storing.
Notes
- Use ripe but firm peaches for best texture.
- Adjust jalapeño quantity for desired heat.
- Store sealed jars in a cool, dark place.
