Description

A moist and flavorful bread combining carrots, apples, and zucchini for a healthy treat.


Ingredients

Scale
  • 1 cup grated carrots
  • 1 cup grated zucchini
  • 1 cup grated apple
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 2 eggs
  • 1/2 cup vegetable oil
  • 3/4 cup brown sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. In a bowl, mix flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. In another bowl, whisk eggs, oil, brown sugar, and vanilla.
  4. Stir grated carrots, zucchini, and apple into the wet mixture.
  5. Combine wet and dry ingredients until just blended.
  6. Pour batter into the prepared pan.
  7. Bake for 50-60 minutes or until a toothpick comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack.

Notes

  • Store in an airtight container for up to 3 days.
  • Freeze slices for longer storage.
  • Substitute honey for brown sugar if preferred.
