- 2 cups grated carrots
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 2 eggs
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 4 oz cream cheese, softened
- 2 tbsp butter, softened
- 1 cup powdered sugar
- 1/2 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×9-inch baking pan.
- In a bowl, mix flour, sugar, baking powder, baking soda, cinnamon, and salt.
- Add oil, eggs, and vanilla. Stir until combined.
- Fold in grated carrots.
- Pour batter into the prepared pan and bake for 25-30 minutes. Let cool.
- For frosting, beat cream cheese and butter until smooth. Add powdered sugar and vanilla. Spread over cooled bars.
Notes
- Store in the refrigerator for up to 5 days.
- For a nutty flavor, add 1/2 cup chopped walnuts to the batter.
