Description

Ingredients

  • 4 large carrots, peeled and thinly sliced into ribbons
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • Salt and pepper to taste
  • Optional: fresh herbs (parsley or mint) for garnish

Instructions

  1. Peel and thinly slice the carrots into ribbons using a vegetable peeler.
  2. In a bowl, whisk together olive oil, lemon juice, honey, salt, and pepper.
  3. Toss the carrot ribbons with the dressing until evenly coated.
  4. Let the salad sit for 5 minutes to absorb the flavors.
