A light and fluffy dessert with warm chai spices.
Ingredients

- 1 cup milk
- 2 chai tea bags
- 3 eggs, separated
- 1/4 cup sugar
- 2 tbsp flour
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/4 tsp cardamom
- 1/4 tsp ginger
Instructions
- Heat milk and steep tea bags for 5 minutes. Remove bags.
- Whisk egg yolks with half the sugar until pale.
- Add flour, vanilla, and spices to yolk mixture.
- Slowly mix in warm chai milk.
- Beat egg whites with remaining sugar to stiff peaks.
- Fold whites into chai mixture gently.
- Pour into ramekins and bake at 375°F for 15 minutes.
- Serve immediately.
Notes
- Use room temperature eggs for best volume.
- Do not open oven during baking.
- Dust with powdered sugar before serving.
