- 1 medium pumpkin
- 1 cup cooked rice
- 1 cup broccoli, chopped
- 1 cup shredded cheddar cheese
- 1/2 cup milk
- 1 tbsp butter
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 375°F (190°C).
- Cut the top off the pumpkin and scoop out the seeds.
- In a bowl, mix cooked rice, broccoli, cheese, milk, butter, salt, and pepper.
- Fill the pumpkin with the mixture.
- Place the pumpkin on a baking sheet and bake for 45 minutes.
- Remove from oven and let cool for 5 minutes before serving.

- Add cooked chicken for extra protein.
