Description

A hearty and cheesy gratin made with root vegetables, perfect for a comforting side dish.


Ingredients

Scale
  • 2 large potatoes, thinly sliced
  • 2 large sweet potatoes, thinly sliced
  • 1 large parsnip, thinly sliced
  • 1 cup heavy cream
  • 1 cup grated cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tsp thyme
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Layer sliced potatoes, sweet potatoes, and parsnip in a baking dish.
  3. In a bowl, mix heavy cream, garlic, thyme, salt, and pepper.
  4. Pour the cream mixture over the vegetables.
  5. Sprinkle cheddar and Parmesan cheese on top.
  6. Cover with foil and bake for 45 minutes.
  7. Remove foil and bake for an additional 15 minutes until golden.
  8. Let cool slightly before serving.

Notes

  • Use a mandoline for even slicing.
  • Substitute any root vegetables you prefer.
  • For a crispier top, broil for the last 2-3 minutes.
