Description

A festive dish featuring a tender goose stuffed with a rich chestnut filling.


Ingredients

Scale
  • 1 whole goose (1012 lbs)
  • 2 cups peeled and chopped chestnuts
  • 1 onion, finely diced
  • 2 cloves garlic, minced
  • 1 cup breadcrumbs
  • 1/2 cup chopped parsley
  • 1/4 cup melted butter
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix chestnuts, onion, garlic, breadcrumbs, parsley, butter, salt, pepper, and thyme.
  3. Stuff the goose cavity with the chestnut mixture and secure with kitchen twine.
  4. Place the goose on a roasting rack in a deep pan.
  5. Roast for 3 hours or until the internal temperature reaches 165°F (74°C).
  6. Baste with pan juices every 30 minutes.
  7. Let rest for 15 minutes before carving.

Notes

  • For extra crispiness, increase oven temperature to 400°F (200°C) for the last 15 minutes.
  • Use pre-cooked chestnuts for faster prep.
