Ingredients

- 1 whole goose (10–12 lbs)
- 2 cups peeled and chopped chestnuts
- 1 onion, finely diced
- 2 cloves garlic, minced
- 1 cup breadcrumbs
- 1/2 cup chopped parsley
- 1/4 cup melted butter
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried thyme
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mix chestnuts, onion, garlic, breadcrumbs, parsley, butter, salt, pepper, and thyme.
- Stuff the goose cavity with the chestnut mixture and secure with kitchen twine.
- Place the goose on a roasting rack in a deep pan.
- Roast for 3 hours or until the internal temperature reaches 165°F (74°C).
- Baste with pan juices every 30 minutes.
- Let rest for 15 minutes before carving.
Notes
- For extra crispiness, increase oven temperature to 400°F (200°C) for the last 15 minutes.
- Use pre-cooked chestnuts for faster prep.
