Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow onion, sliced
  • 2 tbsp olive oil
  • 1 tbsp fajita seasoning
  • 1 cup cooked rice
  • 1/2 cup black beans, drained
  • 1/4 cup sour cream
  • 1/4 cup shredded cheese
  • 1 lime, cut into wedges
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Add chicken breasts and cook for 6-7 minutes per side until fully cooked.
  3. Remove chicken and slice into strips.
  4. In the same skillet, add bell peppers and onion. Cook for 5-6 minutes until softened.
  5. Sprinkle fajita seasoning over the vegetables and stir well.
  6. Add chicken back to the skillet and mix.
  7. Assemble bowls with rice, black beans, chicken fajita mixture, sour cream, cheese, and lime wedges.
  8. Garnish with fresh cilantro.
