- 2 boneless, skinless chicken breasts
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow onion, sliced
- 2 tbsp olive oil
- 1 tbsp fajita seasoning
- 1 cup cooked rice
- 1/2 cup black beans, drained
- 1/4 cup sour cream
- 1/4 cup shredded cheese
- 1 lime, cut into wedges
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a skillet over medium-high heat.
- Add chicken breasts and cook for 6-7 minutes per side until fully cooked.
- Remove chicken and slice into strips.
- In the same skillet, add bell peppers and onion. Cook for 5-6 minutes until softened.
- Sprinkle fajita seasoning over the vegetables and stir well.
- Add chicken back to the skillet and mix.
- Assemble bowls with rice, black beans, chicken fajita mixture, sour cream, cheese, and lime wedges.
- Garnish with fresh cilantro.
