Description
A traditional Mexican soup made with chicken, hominy, and green salsa.
Ingredients

- 2 lbs chicken thighs
- 4 cups chicken broth
- 2 cans hominy, drained
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 cups green salsa
- 1 tsp salt
- 1 tsp cumin
- 1 tbsp olive oil
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, cook until soft.
- Add chicken thighs, cook until browned.
- Pour in chicken broth and bring to a boil.
- Reduce heat, add hominy, green salsa, salt, and cumin.
- Simmer for 30 minutes until chicken is cooked.
- Shred chicken and return to the pot.
- Serve hot garnished with cilantro and lime wedges.
Notes
- Use fresh green salsa for best flavor.
- Adjust spiciness by adding more or less salsa.
- Store leftovers in an airtight container for up to 3 days.
