Description

Healthy and delicious chocolate chip zucchini muffins that are easy to make.


Ingredients

Scale
  • 1 1/2 cups grated zucchini
  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. In a large bowl, mix flour, sugars, baking soda, baking powder, salt, and cinnamon.
  3. In another bowl, whisk oil, egg, and vanilla extract. Stir in grated zucchini.
  4. Combine wet and dry ingredients until just mixed. Fold in chocolate chips.
  5. Spoon batter into muffin cups, filling each 2/3 full.
  6. Bake for 18-22 minutes or until a toothpick comes out clean.
  7. Cool for 5 minutes before transferring to a wire rack.

Notes

  • Squeeze excess moisture from grated zucchini before using.
  • Store muffins in an airtight container for up to 3 days.
  • Freeze muffins for up to 2 months.
