Ingredients

- 1 cup all-purpose flour
- 1/2 cup cocoa powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 tsp peppermint extract
- 1 cup mint chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Whisk flour, cocoa powder, baking soda, and salt in a bowl.
- Cream butter and sugar until light and fluffy. Beat in egg and peppermint extract.
- Gradually mix dry ingredients into wet ingredients.
- Fold in mint chocolate chips.
- Scoop dough onto baking sheet, spacing 2 inches apart.
- Bake for 10-12 minutes. Cool on wire rack.
Notes
- Store in an airtight container for up to 5 days.
- For extra mint flavor, add 1/2 tsp more peppermint extract.
