Description

A delicious chocolate and raspberry swirl loaf that’s perfect for any occasion. The combination of rich chocolate and tangy raspberry creates a delightful flavor balance.


Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup raspberry jam
  • 1 tbsp lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, mix milk, oil, eggs, and vanilla extract.
  4. Combine wet and dry ingredients, stirring until just mixed.
  5. In a small bowl, mix raspberry jam and lemon juice.
  6. Pour half the batter into the prepared loaf pan. Spoon half the raspberry mixture over the batter.
  7. Add remaining batter, then top with remaining raspberry mixture.
  8. Use a knife to swirl the raspberry mixture into the batter.
  9. Bake for 50-60 minutes or until a toothpick inserted comes out clean.
  10. Cool in the pan for 10 minutes, then transfer to a wire rack.

Notes

  • Store in an airtight container for up to 3 days.
  • You can use fresh raspberries instead of jam.
  • For a richer chocolate flavor, add chocolate chips to the batter.
