Description

Chocolate Raspberry Truffles are rich, decadent treats with a smooth chocolate ganache center and a hint of raspberry flavor. They are perfect for special occasions or as a homemade gift.


Ingredients

  • 8 oz high-quality dark chocolate, finely chopped
  • 1/2 cup heavy cream
  • 2 tbsp unsalted butter
  • 2 tbsp raspberry liqueur or raspberry puree
  • 1/4 cup cocoa powder for dusting
  • 1/4 cup finely chopped nuts or shredded coconut (optional)

Instructions

  1. Place the chopped chocolate in a heatproof bowl.
  2. Heat the heavy cream and butter in a small saucepan until it just begins to simmer.
  3. Pour the hot cream mixture over the chocolate and let it sit for 1 minute.
  4. Stir until the chocolate is completely melted and smooth.
  5. Add the raspberry liqueur or puree and mix well.
  6. Cover the bowl and refrigerate for at least 2 hours until the mixture is firm.
  7. Use a small spoon to scoop portions of the mixture and roll into 1-inch balls.
  8. Roll each truffle in cocoa powder, chopped nuts, or shredded coconut.
  9. Store in an airtight container in the refrigerator for up to a week.

Notes

  • For a non-alcoholic version, replace the raspberry liqueur with raspberry extract or omit it entirely.
  • Use gloves when rolling the truffles to prevent melting from the heat of your hands.
  • If the mixture is too soft to roll, chill for another 30 minutes.
