- 8 oz high-quality dark chocolate, finely chopped
- 1/2 cup heavy cream
- 2 tbsp unsalted butter
- 2 tbsp raspberry liqueur or raspberry puree
- 1/4 cup cocoa powder for dusting
- 1/4 cup finely chopped nuts or shredded coconut (optional)
Instructions
- Place the chopped chocolate in a heatproof bowl.
- Heat the heavy cream and butter in a small saucepan until it just begins to simmer.
- Pour the hot cream mixture over the chocolate and let it sit for 1 minute.
- Stir until the chocolate is completely melted and smooth.
- Add the raspberry liqueur or puree and mix well.
- Cover the bowl and refrigerate for at least 2 hours until the mixture is firm.
- Use a small spoon to scoop portions of the mixture and roll into 1-inch balls.
- Roll each truffle in cocoa powder, chopped nuts, or shredded coconut.
- Store in an airtight container in the refrigerator for up to a week.
Notes
- For a non-alcoholic version, replace the raspberry liqueur with raspberry extract or omit it entirely.
- Use gloves when rolling the truffles to prevent melting from the heat of your hands.
- If the mixture is too soft to roll, chill for another 30 minutes.
