Description

Delicious and moist chocolate zucchini muffins that are perfect for breakfast or a snack.


Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup sugar
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/2 cups grated zucchini
  • 1/2 cup chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. In a bowl, mix flour, cocoa powder, baking soda, and salt.
  3. In another bowl, whisk sugar, oil, egg, and vanilla until smooth.
  4. Stir in grated zucchini.
  5. Fold dry ingredients into the wet mixture until just combined.
  6. Add chocolate chips and mix lightly.
  7. Spoon batter into muffin cups, filling each 2/3 full.
  8. Bake for 20-25 minutes or until a toothpick comes out clean.
  9. Cool for 5 minutes before transferring to a wire rack.

Notes

  • Do not overmix the batter to keep muffins tender.
  • Squeeze excess moisture from grated zucchini before adding.
  • Store in an airtight container for up to 3 days.
