Description

Moist and flavorful muffins made with zucchini and chocolate. A great way to sneak in some veggies while enjoying a delicious treat.


Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups grated zucchini
  • 1/2 cup chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. In a bowl, whisk flour, cocoa powder, baking soda, and salt.
  3. In another bowl, beat sugars, oil, eggs, and vanilla until smooth.
  4. Fold in grated zucchini.
  5. Gradually mix dry ingredients into wet ingredients.
  6. Stir in chocolate chips.
  7. Spoon batter into muffin cups, filling 3/4 full.
  8. Bake for 20-25 minutes or until a toothpick comes out clean.
  9. Cool in pan for 5 minutes, then transfer to a wire rack.

Notes

  • Pat zucchini dry with a towel to remove excess moisture.
  • Add nuts or dried fruit for extra texture.
  • Store in an airtight container for up to 3 days.
