Ingredients

- 4 oz chorizo, casing removed
- 2 medium potatoes, diced
- 4 eggs
- 4 small flour tortillas
- 1/4 cup diced onion
- 1/4 cup chopped cilantro
- 1/2 cup shredded cheese
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat. Add diced potatoes and cook until golden and crispy.
- Push potatoes to one side of the skillet. Add chorizo and cook until browned.
- Scramble eggs in the same skillet, mixing with potatoes and chorizo.
- Warm tortillas in a dry skillet or microwave.
- Fill tortillas with the chorizo and potato mixture.
- Top with cheese, onion, and cilantro.
