Description

A simple and flavorful rice dish with fresh cilantro and zesty lime.


Ingredients

Scale
  • 1 cup long-grain white rice
  • 2 cups water
  • 1 tbsp olive oil
  • 1 lime (juiced)
  • 1/4 cup chopped fresh cilantro
  • 1/2 tsp salt

Instructions

  1. Rinse rice under cold water until water runs clear.
  2. Heat olive oil in a pot over medium heat.
  3. Add rice and stir for 1 minute.
  4. Pour in water and bring to a boil.
  5. Reduce heat, cover, and simmer for 15 minutes.
  6. Turn off heat and let it sit covered for 5 minutes.
  7. Fluff rice with a fork.
  8. Mix in lime juice, cilantro, and salt.

Notes

  • Use fresh lime juice for best flavor.
  • Adjust salt to taste.
  • Can substitute brown rice for white rice.
