- 2 tbsp sugar (for rolling)
- 1 tsp cinnamon (for rolling)
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Whisk flour, cinnamon, baking powder, and salt in a bowl.
- Cream butter and sugar until light and fluffy. Add egg and vanilla.
- Gradually mix in dry ingredients until dough forms.
- Combine 2 tbsp sugar and 1 tsp cinnamon in a small bowl.
- Roll dough into 1-inch balls, coat in cinnamon sugar, and place on baking sheets.
- Flatten balls slightly with the bottom of a glass.
- Bake for 10-12 minutes until edges are golden. Cool on wire racks.
Notes
- For softer cookies, reduce baking time by 1-2 minutes.
- Store in an airtight container for up to 1 week.
- Dough can be frozen for up to 3 months.
