Ingredients
- 1 3/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tbsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp cloves
- 1/2 cup vegetable oil
- 1 cup pumpkin puree
- 1 cup granulated sugar
- 2 large eggs
- 1/4 cup brown sugar
- 1 tsp cinnamon (for swirl)
Instructions
- Preheat oven to 350°F. Grease mini loaf pans.
- Whisk flour, baking soda, salt, cinnamon, nutmeg, and cloves.
- Mix oil, pumpkin, sugar, and eggs in a separate bowl.
- Combine wet and dry ingredients until just mixed.
- In a small bowl, mix brown sugar and cinnamon for the swirl.
- Fill loaf pans halfway with batter, then sprinkle cinnamon-sugar mixture. Add remaining batter and swirl with a knife.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Cool in pans for 10 minutes before transferring to a wire rack.

- Use canned or homemade pumpkin puree.
