Description

A traditional double-crust apple pie with a flaky crust and sweet, spiced apple filling.


Ingredients

Scale
  • 2 ½ cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup unsalted butter, chilled and diced
  • 68 tablespoons ice water
  • 67 cups thinly sliced peeled apples (such as Granny Smith)
  • ¾ cup granulated sugar
  • 2 tablespoons lemon juice
  • 1 ½ teaspoons ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 tablespoon unsalted butter, diced
  • 1 egg, beaten (for egg wash)

Instructions

  1. Mix flour and salt in a large bowl. Cut in chilled butter until the mixture resembles coarse crumbs.
  2. Gradually add ice water, 1 tablespoon at a time, mixing until the dough just holds together.
  3. Divide the dough into two equal parts, shape into discs, wrap in plastic, and refrigerate for at least 1 hour.
  4. Preheat oven to 375°F (190°C).
  5. Roll out one dough disc on a floured surface and fit it into a 9-inch pie dish.
  6. In a large bowl, toss apples with sugar, lemon juice, cinnamon, and nutmeg. Pour into the pie crust.
  7. Dot the filling with diced butter.
  8. Roll out the second dough disc and place it over the filling. Seal and crimp the edges. Cut slits in the top crust.
  9. Brush the top with beaten egg.
  10. Bake for 45-55 minutes, or until golden brown and bubbly. Cool before serving.

Notes

  • Use cold butter for a flaky crust.
  • Let the pie cool slightly before slicing to set the filling.
  • Serve with vanilla ice cream or whipped cream.
