- 1 lb elbow macaroni
- 4 tbsp unsalted butter
- 1/4 cup all-purpose flour
- 3 cups whole milk
- 2 cups shredded sharp cheddar cheese
- 1 cup shredded pepper jack cheese
- 1 cup shredded mozzarella cheese
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp paprika
- 1/4 tsp garlic powder
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Cook macaroni according to package instructions. Drain and set aside.
- Melt butter in a large saucepan over medium heat.
- Whisk in flour to form a roux. Cook for 1 minute.
- Gradually whisk in milk until smooth. Cook until slightly thickened.
- Stir in cheddar, pepper jack, and mozzarella cheese until melted.
- Season with salt, pepper, paprika, and garlic powder.
- Combine cheese sauce with cooked macaroni.
- Transfer to the baking dish and bake for 25 minutes until bubbly.
- Let cool slightly before serving.
Notes
- Use freshly grated cheese for best melting.
- Add a breadcrumb topping for extra crunch.
- Leftovers can be stored in the fridge for up to 3 days.
