- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground ginger
- 1 1/2 cups granulated sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 cup canned pumpkin puree
- 1/3 cup water
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
- Mix flour, baking soda, salt, cinnamon, nutmeg, cloves, and ginger in a bowl.
- Beat sugar, oil, and eggs in another bowl. Stir in pumpkin and water.
- Combine wet and dry ingredients. Stir until just blended.
- Pour batter into the prepared pan.
- Bake for 60-70 minutes or until a toothpick inserted comes out clean.
- Cool in pan for 10 minutes. Transfer to a wire rack to cool completely.
Notes
- Use pure pumpkin puree, not pumpkin pie filling.
- For extra moisture, add 1/2 cup chopped nuts or raisins.
- Store wrapped in foil at room temperature for up to 3 days.
