Ingredients

- 1 bunch collard greens, washed and chopped
- 1 smoked turkey leg or wing
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 4 cups chicken broth
- 1 tsp red pepper flakes
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until softened.
- Add smoked turkey and cook for 2 minutes.
- Pour in chicken broth and bring to a boil.
- Add collard greens and red pepper flakes.
- Reduce heat, cover, and simmer for 45 minutes.
- Season with salt and black pepper.
- Serve hot.
Notes
- Remove turkey meat from the bone and shred before serving if desired.
- Adjust spice level by reducing or increasing red pepper flakes.
