Description
A delicious corn pasta salad featuring crispy bacon, fresh bell peppers, and a creamy pesto dressing.
Ingredients

- 2 cups pasta (penne or fusilli)
- 1 cup corn kernels
- 4 slices bacon, cooked and crumbled
- 1 bell pepper, diced
- 1/4 cup mayonnaise
- 2 tbsp pesto
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions. Drain and rinse under cold water.
- In a large bowl, combine pasta, corn, bacon, and bell pepper.
- In a small bowl, mix mayonnaise, pesto, and lemon juice to make the dressing.
- Pour dressing over pasta mixture and toss to coat evenly.
- Season with salt and pepper to taste.
- Chill for at least 30 minutes before serving.

- Can be made ahead and stored in the refrigerator for up to 2 days.
- Add extra vegetables like cherry tomatoes or cucumbers for more freshness.
