Ingredients

- 1 lb beef stew meat
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes (14 oz)
- 1 can kidney beans, drained (15 oz)
- 1 can corn, drained (15 oz)
- 2 potatoes, diced
- 4 cups beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp smoked paprika
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- Brown the beef stew meat in a large pot over medium heat.
- Add the onion and garlic, sauté until softened.
- Stir in diced tomatoes, kidney beans, corn, and potatoes.
- Pour in beef broth and Worcestershire sauce.
- Season with smoked paprika, chili powder, salt, and pepper.
- Simmer for 1 hour or until potatoes are tender.
- Serve hot.
Notes
- For extra heat, add diced jalapeños.
- Can be made in a slow cooker on low for 6 hours.
- Leftovers taste even better the next day.
