Description

A warm and comforting wild rice soup perfect for autumn days.


Ingredients

Scale
  • 1 cup wild rice
  • 4 cups vegetable broth
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, sliced
  • 3 garlic cloves, minced
  • 1 tbsp olive oil
  • 1 tsp thyme
  • 1 tsp rosemary
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Rinse wild rice and cook according to package instructions.
  2. Heat olive oil in a large pot over medium heat.
  3. Add onion, carrots, celery, and garlic. Sauté until softened.
  4. Stir in thyme, rosemary, and bay leaf.
  5. Add cooked wild rice and vegetable broth. Bring to a simmer.
  6. Season with salt and pepper. Cook for 15-20 minutes.
  7. Remove bay leaf before serving.

Notes

  • Store leftovers in an airtight container for up to 3 days.
  • For extra creaminess, add a splash of coconut milk.
